The Best Blogs I've read the last couple of Weeks 8/27/11

The last couple of weeks, I've found many blog posts that deal with wifely duties, I don't think it's a coincidence, but Spirit led. God knows just what we need, when we need it...don't you? 


Many times I get so caught up on my daily routines and kids activities that I forget about my beloved, my special someone who lays next to me every night, my special blessing God gave me over 21yrs years ago. He wakes up every morning no matter how tired he is and goes to work, but always makes sure to kiss me good-bye before he walks out the door. God is so loving with me and reminds me to not forget about my husband no matter how tired, sick, or busy I get. The following blogs are all from the "Far Above Rubies" blog Titus 2 Mentoring Series I pray your heart is ready and willing to receive whatever God has for you today.


God assigns a Wife and Mother three specific roles in the home
1. She is to be a helpmeet to her husband (Genesis 2:18)
2. Wife is to bear and nurture children (Genesis 1:18)
3. Wife is to manage the home (1Timothy 5:14)

A traditional wedding vow, for a woman, always included the following words:
". . . to Love, Honor and Obey, until Death do us Part."
This was her contract. She was not only promising to Love and Honor her husband, she was promising to Obey him. 


Ladies, it doesn't matter how beautiful you are on the outside...if you are a woman without discretion you're in comparison to a dirty, smelly pig with a beautiful gold jewel in it's nose!  A pig is still a pig!  It doesn't matter how you dress up the pig, it is still very noticeably a pig.  You can put jewelry, make-up, perfume, nail polish, and high heels on the pig and it doesn't look any more like a woman than it did before you put the accessories on it.

    She holds all my goals, hopes and dreams inside her little pages. I mentioned last week that this is my brain on paper. I take it with me everywhere and always have what I need to keep track of household, family, and writing affairs. 
    Here she is, in all her glory, my new planner. She may not look like much. But, trust me when I say she is a powerhouse just waiting to be unleashed.

    Recipe Wednesdays Chicken Enchiladas 8/17/11

    Green/Red Chile Chicken Enchiladas

    Today I am going to share with  a recipe my family and I just love! Due to my Fybromyalgia and Seizure like symptoms due to some food allergies, I've had to change the way I eat. Everything has to be fresh, non-packaged, no sugar, wheat free, gluten free, caffeine free, no msg's, no artificial sweetners (they can cause seizures) and with all the chemicals they are just not good for me :( I can only use Stevia because it is an all-natural herbal product.
    With all these restrictions, I have been very happy to still be able to eat corn, potatoes, fresh fruits and vegetables, white and brown rice, and beans. I can also have eggs, meat, chicken, fish, and dairy products. The recipe below is a great example of what I am allowed to have with the exception that I used 2 canned items. Next time I will find the recipe for the sauces and make it myself. I didn't get an allergic reaction to them, but I did find it had some ingredients listed I didn't need in my system. I hope you enjoy it and if you have any questions please feel free to ask???


    Ingredients:
    6-9 Corn Tortillas
    1 1/2 - 2 lbs of Cooked Chopped Chicken
    28 oz can Las Palmas Green Chile Enchilada Sauce (Medium)
    10 oz can La Victoria Red Enchilada Sauce (Mild)
    1 lb bag Mexican Blend Shredded Cheese
    16 oz Cottage Cheese
    Rectangular Baker for Lasagna or Deep Cover Baker like the one on the picture
    Large Mixing Bowl

    Here is a picture of the Sauces, just in case you've never bought them :0)


    Directions:
    1. Mix together Green and Red Enchilada Sauce on large Mixing Bowl. 
    2. Pour about 1/2 -3/4 cup of Enchilada mix on bottom of Baker.
    3. Dip 3 Corn Tortillas into Large mixing bowl with sauce. Now, lay flat on the Baker over the sauce overlapping each other.
    4. Add about 3/4 cup of Chopped Cooked Chicken over Tortillas.
    5. Spoon about 3/4 of Cottage cheese on top of Chicken and spread.
    6. Pour about 3/4 cup of Sauce over layer.
    7. Add about 1 cup of Shredded cheese over layers.
    Start Over from number 3 until all ingredients are gone!

    Here is the finished Recipe BEFORE I Bake it in the microwave Covered for 30 min...Read below for the remainder of the recipe!

    I use my Pampered Chef Deep Covered Baker for this recipe and it is the best! I don't heat up my house during the Summer months and it only has to baked in the microwave for 30 minutes! My husband HATES, HATES, HATES microwave food with a PASSION!!! He can't tell I made this recipe in the microwave at all!
    If you are making this recipe on a regular rectangular baker, you have to bake it in the oven for about 1 hr or until you see the top cheese completely melted! Yum-O!!!! I'm hungry again and I just finished having this recipe for dinner!
    I made spanish rice with a side of beans and Wa-la, dinner was served!

    This is how it should look after you bake it in the microwave or the oven :0) Doesn't it make you hungry?!

    This is my Spanish Rice, No I'm not sharing this recipe...just yet! Hahaha, evil laugh!

    Review Tuesdays 8/16/11

    I know I've been away for quite some time and for that I apologize. I've been dealing with more health issues than I care to share! One of the advantages of having to be in bed for more than a couple of days is I have time to read some good Christian fiction. My husband bought me my Kindle for my 40th Birthday this past June and I have been able to download many FREE books some of which I have already shared with you. Today I want to introduce you to a new author...at least to me :) 

    Kathleen Morgan, is an acclaimed writer of historical and futuristic romances and has written an excellent book in Daughter of Joy. The main character Abigail Stanton is a widow that has recently lost her husband and son and moves to Culdee Creek to become the housekeeper of Conor Mackay. Abigail moves away from everything she knows to forget about the pain and loss, but soon realizes God has other plans for her. Conor is a bitter single man with a young daughter that is used to all the women falling at his feet, but not Abigail and she makes that very clear!

    This book is a wonderful start to the Culdee Creek Collection and it's FREE on Kindle! If you have an iPhone or Kindle make sure you download it!
