Meet my Son Andrew aka "Andy"

I will be missing in action for the next couple of days. The reason...my baby boy will be graduating from high school and time is just passing me by so quickly that I didn't realize it until just now! 
13 years ago my husband and I decided to homeschool him and didn't know where this journey would take us. Friends and family would always ask us, "How long are you thinking of homeschooling?" Now we know they questioned us not so much because they cared, it was because they wanted to put their two cents in!  How long? That was the magic question, we didn't know. One thing we did know and that was that God was with us every step of the way and that we wouldn't make it without His help! 
Every journey is different. We started ours because our son had just been diagnosed with Autism and the doctors and school system wouldn't give us much hope. We turned to the unknown, trusting a known God and for His direction! 

We started with a boy that couldn't put three words together to form a sentence to having a young man that is dedicating his life to serving God and His people.
We started with a boy that wouldn't look us in the eye when we talked to him to having a young man that is focused and now driving and about to get his license.
We started with a boy the doctors said would have to live in an institution to having a young man that is completely independent and attending college this fall.
We his parents can truly say...Until now the Lord has helped us!

Beautify Our Lives and Homes ~ Monday Monthly List 5/23/11



I hope you had a great weekend and I would love to read your comments!!! Hint, hint!!!!

Today I want to talk about our Monthly List. I briefly touched on this when I blogged on how important first impressions were and that we needed to take care of our Front Entrance.  I've included the link for you to reference just incase you've forgotten.

Now we will work on our Monthly list. You will have to take out your old faithful Calendar and a pen or pencil. As you have been doing your Beautify your home Mondays, I've told you to work fast and that this was not a deep cleaning day, remember? Well, that is because the deep cleaning comes in your Monthly cleaning week!

Open your calendar and decide what you are going to deep clean that whole week. Let me give you my Monthly List as an example and you take it from there. I always start with the last week of the month to start off the month fresh! I do this on Sundays and end on Saturday.

Sunday May 29th. - June 4th.  FRONT ENTRANCE/ PORCH
Sunday June 5th. - June 11th.  DINING ROOM/KITCHEN/OFFICE (this is all one room)
Sunday June12th. - June 18th.  BATHROOMS (2) MASTER BEDROOM
Sunday June 19th. - June 25th.  LIVINGROOM/HALLWAY/LINEN CLOSET
Sunday June 26th. - July 2nd.   BACKYARD/FRONT YARD

There are months that only have four weeks so I don't work on the yards on those months. We regularly work on all these areas, but on the weeks that we have to deep clean them we purposely look for projects we have been putting off. We have all week to work on them and we work 15-30 or even a full hour a day and that is it! But I know that I am accomplishing a lot and at the end of that week my kitchen or bathroom looks awesome and I know that whatever I didn't get to will get done the following month!

If you have been following your Daily and Weekly list you should be able to get right into your Monthly list, but if you haven't I would recommend for you not to start on this until you've worked on the others first.

Recipe Wednesdays Zuppa Toscana 5/19/11

Let me start by saying that I've revised my Organic Greek Yogurt. I tried it this week and every time I make it I test it and make changes if necessary. It was the best I've made and I know you will love it! I believe the reason for the success of my Organic Greek Yogurt was that I used all Organic products.

Now, to today's recipe! Who doesn't love going to the Olive Garden and enjoying one of their most popular soups...Zuppa Toscana that is. Well, once my kids got older and they no longer could use the "Kid's Menu", it became a little harder for us to go as a family, $$$$.

One of the menu items I missed the most was the Zuppa Toscana and their Bread sticks Dipping Sauce...Yum!!! Anyways~! One day at our homeschool group, one of our families was enjoying this great soup and I asked what it was? Mrs. Lamb told me it was the Olive Garden soup she loved so much. She also missed it and someone had given her the recipe and made it all the time. I didn't ask her for the recipe, but I went and googled for the recipe and I found it! I've made some changes here and there and have made it my "Unique Me" recipe and I know you and your family will love it!

I make it as a Main Course for my family and so it has more of everything!

Zuppa Toscana
4 Italian Hot Sausages
1 tsp Crushed Red Peppers
½ Large White Onion Finely Diced
5 Bacon Strips Diced and fried
2 tsp Crushed garlic
2 TBS Chicken Bouillon
4 Cans of Chicken Broth
8-10 Cups of Water 
Salt to taste if needed
1 Cup of Heavy Cream at room temperature (VERY important!)
3 Large Russet Potatoes Sliced
¼ of a bunch of Kale 

Directions:
1. Saute Italian Sausage and Crushed red peppers in a large pot. Remove some of the oil, (the oil left gives it flavor, make sure you leave some behind) sausage mix and set aside. 
2. In the same pan, saute bacon, onions and garlic over low-medium heat for approximately 15 min. or until the onions are soft. Add Sausage.
3. Add Chicken broth, bouillon and water and heat until it starts to boil.
4. Add sliced Potatoes and cook until soft, about 15-20 min.
5. Add the heavy cream Little by Little! and just cook until thoroughly heated.
6. Add salt if needed
7. Stir in the kale right before you turn off, let all heat through and serve. Delicious!

Recipe Wednesdays Hummus 5/18/11



Roasted Peppers Hummus

I love Hummus, but I can't buy the store brands, because they have Tahini. Tahini is crushed sesame seeds and I am highly allergic to them! One time at a gathering my friend Andie Tucker brought this awesome Hummus and I asked her for the recipe and now I am sharing it with all of you. Like always I have added other ingredients, but that is the fun of creating homemade recipes, isn't it?

I love cooking with Roasted vegetables. I think it gives my food a totally different taste.

Ingredients:
1 Can Garbanzo Beans or Cheakpeas (Drained and Rinsed)
1/2 Cup of Mayo
1/2 Cup of Grated Parmesan Cheese
2 TBS Lemon Juice
1 Clove Garlic (crushed)
1/4 tsp Chili powder
1/4 of onion (finely chopped)
1/2 Large Roasted Pepper (I buy them in a jar from Trader Joe's)

Run all ingredients through the Food Processor until creamy. Note: Don't try to do this recipe on your blender, it won't work! It will come out to smooth and more like a soup.

Eat with Pita Chips or Pita Bread. It's also great as a Vegetable Dip!

Beautify Our Lives and Homes ~ Wednesday 5/18/11



Sorry I am posting so late, but I am just not feeling well today.  One of the great things about having a Morning, Afternoon and Evening To do List is when you don't have a great day like the one I'm having today, I know exactly where I left off and what I have to do next. Not only that, but my family knows it as well.
Let's pretend I am having a normal day and I was able to do my Morning routine. I kind of did except for the laundry and quiet time and...oh yes breakfast! I think it's going to be four in the afternoon and I haven't had breakfast yet, go figure!

I hope you had a chance to work on your Weekly list yesterday. The list is what will determine what your week will be like.
Today in the morning you had to add whatever chores you had on your Weekly list you made yesterday.

Don't forget about your Afternoon to do list and Evening list. For me Wednesday  is the day to clean the Restrooms. As you may already know that didn't get done today. Church is in the evening and that won't happen either! I was thinking this morning as I laid in bed not able to do much, how funny it was that the week I choose to share my "Organizational skills" is the week that everything goes NOT as planned! Hahaha! Life...it's better to laugh about it, than to whine!

I promise to try and have a better post tomorrow.  In the meantime, I want to share with you one of the best websites available to teach us how to fly through our day! You may not want to come back to this little bitty blog, but that's ok I'll still share it :)

Beautify Our Lives and Homes ~ Tuesday 5/17/11


I consider Tuesdays my “Let’s Bake a Pie Day!" Why you ask? Well, it’s because I don’t have a set chore for Tuesdays,  I guess it’s my free day. If I end up having the kind of day I had yesterday, Tuesday ends up being my “make-up” day. Whatever I didn’t finish on Monday I finish on Tuesday. Tuesday is also the day I sit down and take a look at my week to see how slow or chaotic it could be. The magic word here is “could”, it’s up to me and how well I work on my list and how I follow it that will determine if my week goes smoothly or chaotic (I pray smoothly).

Here is my Tuesday to do list:
Shower/Wash-up, Make-up, Hair, Dress to Shoes!
I tidy up my bathroom as I go along
Make my bed
Eat Breakfast
Quiet time with the Lord (Devotion)
Check items for Dinner, thaw if necessary.
Check for Trouble spots and clear them!
Finish whatever I didn’t get to finish from my Beautify my home Mondays list
1 Load of laundry from start to finish
Work on your Weekly List

As you can see it’s the same every Morning! Practice makes…habit.

When I’m done with my Morning To do List  I start on my Weekly list… Get your pens and paper ready, because this is all for you do to!

Today I want you to think about the things you need to get done every week. Years ago when I first started to use this system, I used Index Cards, then I switched to a small 3 ring binder, today with smart phones I can just use my iphone! It’s up to you and however you fill comfortable, the important thing is that you write down the things you know need to get done! 
After you have a list of everything you have to do, take out your calendar for the week and write down when they have to get done and when you want some of them to get done.

Example:
Monday: Beautify your Home
Tuesday: Work on Weekly List 
Wednesday: Balance check book, Make grocery list, clean bathroom, etc.
Thursday: Errands day, Grocery store, return library books, dry cleaners, post office, etc.
Friday: Water plants, work on yard, clean refrigerator, Date night, school project, etc.
Saturday:
Sunday:

Do you get the idea? Try it for just One week and see what happens??? Knowing what you have to do everyday helps you schedule your daily life better. I never knew how chaotic my life was until I tried this system for just One week!



Now...Try making an appointment for yourself, something you enjoy doing. My daughter and I just found this fabulous Antique store and we can’t wait to go back! Well, I am inking myself (not pencil in) onto my weekly list, to make sure we go back this week! I can’t wait!!!!

Beautify Our Lives and Homes ~ Monday 5/16/11



My dear followers,
Today I will continue the “Beautify My Home Mondays” Series with a twist on the name… “Beautify Our Lives and Homes” and it won’t be just on Mondays… I will be blogging daily!
I want to talk to you about my Daily to do list or what others call Daily Routine. I want to go into more detail on how I go about my days and how I accomplish everything I do.

Let’s start with Mondays: Yes I know it’s super, super, super late! To my excuse, after waiting for over two years for my beloved to hire someone to trim the over grown trees in our back yard and not Whining about it,(yes, it’s true I didn’t whine about it, I think!) I also went ahead and worked on the back yard as I waited on the workers that didn’t show up on time! My yard is looking good now, Oh and the workers are finally here working as I'm blogging, very, very late! OK back to my Mondays!

You already know I Beautify my Home on Mondays, I don’t do any deep cleaning on Mondays! I am  tired from the weekend, but I want to make sure the house is presentable just in case someone shows up unexpected My home and I are always ready! Side Note: Today, this list went out the window for the Morning! That's ok, don't beat yourself up if you don't check off every item on your list, there's always tomorrow!

This is what I do the moment my feet hit the ground!
1. Shower/Wash-up, Make-up, Hair, Dress to Shoes! It’s very important for me to wear my shoes even if I’m not going anywhere. When I have my shoes on, I feel ready (and I am) for anything! It’s all in the mind, it’s like my mind and yours will says, “OK, we’re ready for work”!
2. I tidy up my bathroom as I go along. If my husband comes after me, he is kind enough to do the same.
3. Make my bed.
4. Eat Breakfast
5. Quiet time with the Lord (Devotion)
6. Check items for Dinner, thaw if necessary.
7. Check for Trouble spots and clear them!
8. Weekly Beautify my Home Mondays
Change sheets.
Empty all the trash.
Vacuum all rooms.
Mop kitchen and bath.
Clean mirrors and doors.
Feather Dust furniture.

9. Wash 1 Load of Laundry, dry, fold, hang, put away!
10. Free of Home chores until Dinner time 

In the Afternoon:
1. Clear Dining Room table of all Clutter
2. Prepare Dinner
3. Fill sink with hot soapy water
4. Wash all dishes used to make dinner

In the Evening:
1. Tidy-up Kitchen
2. Clear Trouble Spots
3. Load dish washer
4. Wash any left-over dishes
5. Tidy-up Living room
6. Check planner for tomorrow’s activities
7. Choose clothes according to tomorrow’s activities
8. Wash face/teeth
9. Relax 

As you can see, Mondays is my Beautify my home Mondays and that is the only cleaning I do. Tuesday brings other chores and I will share those with you tomorrow.
Having a Daily to do list is very important, but not just a to do list, a Morning, Afternoon and Evening to do list!
I hope that you see how much you get accomplished and how much more hours in your day you will have to do what you love best…Whatever that might be!

A Mother's Legacy... 5/7/11



"A want to leave a legacy... How will they remember me? Did I choose to love? Did I point to you enough to make a mark on things? I want to leave an offering a child of mercy and grace who blessed your name unapologetically...And leave that kind of Legacy". Nicole Nordeman~Legacy

The above lines may just be verses of a song, but since I heard them years ago they have been my prayer and the legacy I will leave my children! My mother went to be with the Lord over 20 years ago and I didn't have the best relationship with her. She had a hard life and a hard time showing me any affection. But one thing I remember and that is walking into her room and finding her on her knees in prayer. She was a woman dedicated to her family and a hard working woman. She always made sure there was food on the table and my friends and family where always welcomed! That is the legacy I choose to keep of her. She was a woman that found the Lord and clung to Him and didn't let Him go! She would talk about heaven and how wonderful it would be to walk in the streets of Gold (specially if it meant that she would be skinny forever!) Hahaha!

Now is my turn and my prayer is that my children will see that I am choosing to love and show mercy and grace, because much has been given to me. I hope that my life can make a difference in their lives and in others because of what God has done not because of anything I have accomplished. That's the kind of legacy I want to leave. My prayer is that without a doubt they would know that I loved the Lord and made no excuses about it. I want to pass on a Godly Legacy!

I may Not be well traveled, not well read, not well-to-do or well bred but one day I Just want to hear instead, "Well Done" good and faithful one...And leave that kind of Legacy

How about you? Have you considered what kind of legacy you are leaving your children? Not just the ones you gave birth too, but your spiritual ones as well. This past year I had many health issues and My daughter was blessed with two spiritual Mothers, Carol and Andie. From one she received the practical side of the mom she needed and from the other she received the spiritual. Both Andie and Carol are practical and spiritual, but my daughter related to them in a different way and it worked out perfectly! The Lord knew what she needed and it gave me so much peace that her needs where being met and that my dear friends were being her Titus 2 ladies. They are both her "Spiritual Moms or other Moms" like my daughter dearly calls them.

But as for you, speak the things which are fitting for sound doctrine. 
Older women likewise are to be reverent in their behavior, not malicious gossips nor enslaved to much wine, teaching what is good, so that they may encourage the young women to love their husbands, to love their children, to be sensible, pure, workers at home, kind, being subject to their own husbands, so that the word of God will not be dishonored. In all things show yourself to be an example of good deeds, with purity in doctrine, dignified, sound in speech which is beyond reproach, so that the opponent will be put to shame, having nothing bad to say about us. (Titus 2:1,3,4,5,8)











Recipe Wednesdays Homemade Greek Yogurt 5/4/11

Homemade Organic Greek Yogurt

Today I'm starting a Series of Recipes that I love to make at home. Sure I could buy them at the store, but that would take away the fun of making them myself! Not only that, the price of Organic Greek Yogurt is pretty high for the amount I am making and that makes it worth the time and I love creating things and enjoy the process and the end results! 

I am adding a Youtube Video that really helped me understand how to make my Yogurt. My recipe is very close to the one on the video. It's up to you which one you want to use. Quick note: Yogurt starter and 1/2 cup of store bought yogurt are basically the same thing.

INGREDIENTS:

1/2 gallon (4cups) whole Organic milk (homogenized and pasteurized is ok, but NOT ultra- pasteurized)

1 Pint of Organic Half and Half

1/4 cup of Powder Milk (New Ingredient)

Large Pot (New Item) 

1/2 cup Organic plain Yogurt with live/active culture (once you've made your homemade batch, you can reserve 1/2 cup to use in your next batch instead of the the store-bought)

Crockpot


Cheese Cloth


Large Strainer



DIRECTIONS:  I normally start my yogurt making at around 3pm. At around 9pm it is ready to go into the garage or into the oven for overnight wrap. 

1. Pour 1 Pint of Half and Half, 1/4 cup of Powder Milk and 1/2 gallon of milk into a pot and Cook until it reaches 185 degrees F. Check with a Cooking Thermometer. This process will make your yogurt extra thick and rich!  (This will kill the bacteria and rearrange the protein).

2. Pour The Milk mixture into the Crock Pot and let sit for about 3 hours.

3. After the 3 hours (more or less), with a kitchen thermometer check temperature. It has to be 105 degrees F. but not below!

4. Mix 1/2 cup of plain Yogurt with 1/2 cup of the milk mixture. Little by little pour it in the crock pot. Cover the Crock pot tightly with Foil paper and wrap crockpot in a heavy bath towel. Put inside a pre-heated 100 degrees oven  overnight. With the heatwave we've been having, I put mine in the garage :) The longer you leave the yogurt the more sour it will be. The max I leave mine is 12 hrs.

If you want Regular Yogurt, after the 8 hours or the following morning you are done! You can add Honey, sugar, etc. Fresh fruit.

For Greek Yogurt, follow the directions below.


The following morning: (This is the time to save 1/2 cup for your next batch of Yogurt, BEFORE you strain the Yogurt!)

1. Put a coffee liner or cheesecloth in a colander and pour yogurt into it. Put inside the refrigerator for about 4 hours for extra thickness.

2. Remove yogurt from the cheese cloth into a large container. Whisk until all blended.

3. Done! The Greek Yogurt will be thick and rich. You can add honey, sugar, splenda, fresh fruit, nuts, etc. The choice is yours and the SAVINGS too!

Beautify my Home Mondays Week 4 (5/2/11)




This is our last week of the “Beautify My Home Mondays” Series. Today I will review what we have learned in the last three weeks and will add your last assignment, let’s get started!


1. I introduced you to the 15 minute motto “You can do anything for 15 minutes except whine!” The use of the Timer for ever task you had at hand. 

2. I gave you the list of several simple cleaning areas you could do to keep your house in order and not go into panic mode every time you got a call and knew someone was coming over.

3. This is to be done ONCE a WEEK (every Monday) and maintained throughout the week.

1. I asked you to type your list and to put it inside a sheet protector to mark off as you worked on each task.

2. You were to Give away 27 things and Throw away 27 things. This was all to have less clutter in your home.

1. Continue to Beautify your home on Mondays!

2. I gave you tips on how to do your Laundry and it not ending up on your sofa :) One load at a time - One or Two loads a day!

Now to week 4
I will be covering two very important areas, the first one will be one that you will be taking care of on a daily basis TWICE a day in the morning and in the afternoon. The second one you will take care of ONCE a month.

Let’s begin with the first one. 
When my husband walks into our kitchen we have a long  counter top he and everyone else in the family (including me) is very attracted to. I say attracted to, because it is like a magnet! Everything falls into this counter top, I mean everything!!! This is our “Popular Destination or Our Trouble Spot”. I can see your heads shaking right? You know exactly what I am talking about! 

I want you to call your Trouble spot for what it is...anxiety, stress, strife, agitation, pain, nuisance, pest, thorn on your side! And the list goes on and on, on my Thesaurus! I can share with you a story with each of those words that I went through, because of Our Trouble Spot in our Kitchen! For some of you it's not in your kitchen, it can be in your living room or in your bedroom. It can be any place that you know and recognize as your "trouble spot". Mine just happens to be in my kitchen.

Now, I don’t want you to go and whine to your family on how they are bringin all this anxiety, stress, strife, agitation, pain, nuisance, pest, thorn on your side to your life and much more! I’m sure you and I have been part of the problem too :) Hahaha! No, what you are going to do instead is, every morning you are going to put away in it’s place everything that is on top of that spot. Your family is going to be able to see what is under there and because it's been hidden for so long they will notice it and then you will get them! Hahaha! JK :) This is when you will be able to “ask” them if they could please help you to keep it that way. Will they do it all the time...NO! That is why every day in the afternoon you will repeat what you did in the morning. With time as you continue to tell and ask them to keep things away from this spot they will. Then, you will continue to pick up after yourself and your spouse, you two are the worse to get the hang of this...believe ME! Hahaha!


You have to understand you are doing this to keep your home in order, to bless your family and in return you have more hours in your day, to do something else you enjoy! Keeping that Trouble Spot cleared every day, Morning and Afternoon, will make a huge difference, believe me!
Now to the Once a month
Growing up I remember going to my Aunts house and she always had her house nicely decorated. The first impression I had was her front porch, the entrance! I just loved how she paid attention to all the details and she always made sure it all cordinated and it went according to the seasons. A couple of weeks ago I went to visit her and I noticed she had let go of the decorations on her front porch. It was dusty, things were all over the place (not because of the wind!) I immediatly noticed, because I know my aunt. I later found out how busy she has been lately and I understood.

The first impressions we give people stays with them no matter what! . Do you ever stop to think what people think when they knock on your  front door? I don’t even want to tell you what my front entrance (this includes as you open your door and what they see first when they come into your home) usually looked like before I started to do this it was embarrasing!  It’s still a work in progress, but much better now.

This is what we will do ONCE a month: Make sure you choose What week of the month you want. I like to choose the LAST week. To start the month fresh!
1. Clean cobwebs
2. Dust front door and any windows that face the front entrance.
3. Dust any Patio furniture you may have in the front
4. Sweep/hose the front entrance
5. Clean the walls, switch plates. (These are the ones inside your front entrance)
6. Dust Baseboards, Put away anything that doesn't belong in the front entrance!
7. Add your own personal touches Ex. Seasonal flags, plants, mat, Add Color! Personal Touches! Make it Welcoming! I'VE ADDED SEVERAL PICTURES OF SPRING DECORATED FRONT ENTRANCES. ENJOY!

Note: Don't try to do all this in one day. Do a little every day. You have a week to complete!
