Roasted Peppers Hummus

I love Hummus, but I can't buy the store brands, because they have Tahini. Tahini is crushed sesame seeds and I am highly allergic to them! One time at a gathering my friend Andie Tucker brought this awesome Hummus and I asked her for the recipe and now I am sharing it with all of you. Like always I have added other ingredients, but that is the fun of creating homemade recipes, isn't it?

I love cooking with Roasted vegetables. I think it gives my food a totally different taste.

Ingredients:
1 Can Garbanzo Beans or Cheakpeas (Drained and Rinsed)
1/2 Cup of Mayo
1/2 Cup of Grated Parmesan Cheese
2 TBS Lemon Juice
1 Clove Garlic (crushed)
1/4 tsp Chili powder
1/4 of onion (finely chopped)
1/2 Large Roasted Pepper (I buy them in a jar from Trader Joe's)

Run all ingredients through the Food Processor until creamy. Note: Don't try to do this recipe on your blender, it won't work! It will come out to smooth and more like a soup.

Eat with Pita Chips or Pita Bread. It's also great as a Vegetable Dip!

  1. Christina, that sounds really good, and easy too! I have a craving for hummus sometimes and store bought just never ever tastes as good as homemade! Have you ever tried making your own pita chips? I have always wanted to but haven't had the time. With us trying so hard to lose weight and eat healthy, even though I know how good this is for you, I might eat the whole thing by myself. It has been 3 months with low/no sugar and no junkfood and I have finally started getting some serious cravings. I guess I should just give myself some liberty with the hummus, huh?!
