Three Pinterest Recipes Review...at last!

On my last post back in July...Wow! It has been a long time since I have blogged. I shared with you Three Instagram recipes I was going to try and give you my review...Well here it is!

The first recipe was the "Crowd pleaser chicken".
It was extremely easy to make and I made a double batch (if you make a double batch make sure to also double the liquid amount, I didn't and it was a little dry). I didn't make it on my crock-pot instead I used my faithful Pampered Chef Deep dish baker. We all loved it and the ingredients were easy to find. This is a big one for me because I am a semi-homamade kind of cook and if your recipe has ingredients that are too hard to find or too many ingredients I probably won't try it.

My second recipe was the "Low-Carb Coconut Cream Pie".
It looked delicious but when I started to shop for the ingredients it kept going and going and it was going to cost me close to $50 to just buy the ingredients! Yes, I know that I was going to get to keep some of those ingredients for other recipes but I just felt it was not worth my time and money.

My last recipe was "Mosquito Repellent".
My daughter was about to go on her first missions trip to Haiti and I had bought the ingredients to make it. if you have shopped for essential oils you know it can get pricey but it is so worth to buy because you get to use them over and over again. Well, this recipe calls for glass containers and my daughter was not going to be able to take with her because of airline restrictions. I will make this recipe when our next mosquito season comes around but for now my EOs await for the next recipe :)

Three Pinterest Found Recipes I will make this week!

Most of us have heard of Pinterest and if you are like me, you follow many boards and are hooked on Pinterest.

One rule I have made for myself is to not pin anything unless I know I am capable and able to make that idea myself. I do have some boards labeled "My Dream..." even those are ideas that are doable and very much can make my own.

Today I am sharing with you Recipes I am going to make this week for my family. Many of the recipes I already make are those that I have found on Pinterest. The difference now is that I am giving you a little glimpse of what my family will be enjoying this week!

I am having a pretty busy week and the recipes I am making will be devided into three different days.

One day, I will make the main dish.
On another day, I will make the dessert.
The last day, I will be making a homemade product such as a cleaner, sewing, beauty who knows?!

Next is my Dessert! I have been dying to try this next recipe and most of the time I make Sugar Free, Low Carb, Gluten-Free Desserts. You'd be surprised how my family enjoys them and don't even miss the "real stuff".

My daughter Lilly will be going on a Missions Trip with her High School group from church. In just about two weeks she is going to Haiti and the heat along with the mosquitos is a for sure thing there. I am going to make a Natural Mosquito Repellent for her to take on her trip.

My Favorite Things 1

One of my favorite things to do is to share with my friends and family that great product or book or... that I just found.
Today I want to share with you items, blogs that have become my favorites.
As stated on my Review Tuesdays posts, I don't make any monetary or free anything for recommending these items. I just love it when I find something great and I get to tell you all about it!

My first item I'm loving beyond loving, is a great blog I found through Pinterest (you can follow me if you would like). The blog is The Small Things blog. Kate is the administrator, creator, expert do it all gal! I just love how easy everything she does is! I had been looking for tips on how to do my hair and makeup and she just inspires me! As I read about her I found out she is a believer and is married and is expecting her first baby. Can you tell I just love her and I have never even met her!



Let me know how you like her and become obsessed with everything she teaches!

Next is my Elf Small Stipple brush.
I just can't believe I did not have this brush before? Where have you been all my life? It's only $3 and it does wonders when applying my concealer.
You can find the Elf brand at all Target stores.

My next item is a face primer. It's from Rimmel, Fix & Perfect. I also bought at Target and it was about $6-$7
I use it under my makeup after my moisturizer. It has a tint to it and it makes my foundation last all day! I have very oily skin and I need something to keep it all together. It takes a lot of work to look good you know!


I can't talk about my favorite things without mentioning Macaroni Grill's Homemade Chocolate Cake! It is oh soooo good! If you have been at the restaurant to celebrate your birthday you know what I am talking about. Here is My Lilly celebrating her 18th Birthday enjoying her yummy free chocolate cake. Yes, it's free on your birthday!

I'm not  a big coffee drinker but when my husband bought the Keurig K-cup I was sold! I can make myself the Ice coffee I love from McDonald's (Ooh, yeah that's another one of my favorite things!)
We bought this Keurig at Costco and it came with 60 K-cups. We always look for specials at Walmart, Target, Stater Bros...to buy our K-Cups. It is so convenient.

My Last favorite thing is My Cat Summer. She is frisky, not very lovable and oh such a Diva! Here she is with My Lilly enjoying some time on Facebook.

Low Carb Lasagna...It's Oh so good and it's Gluten Free too!

I love it when I come across a recipe that eventually becomes a favorite. This Low Carb Lasagna is a hit!

I made this recipe for the first time last Christmas eve of 2012. I have to be honest, I was a little scared because I thought only my husband and I would eat it. He and I had just ended a very strict diet and we had to be on a Low Carb Diet for a few weeks. I am used to diets because of health issues, (you can read about it here) it wasn't so hard for me to once again eat Low Carb but for the rest of the family was a different story. You know how we all feel about the holidays, the more the better, the fatter the juiciest, the sweeter...you get the picture. Well at the end of the night everyone's comments were of surprise and the usual, "can we take some leftovers please?"

Zucchini
 Cauliflower
I use a combination of ground turkey and ground beef
 Egg
 Mixing eggs with cheeses...yum!
 All Mixed
 Ground mix of meats with spaghetti sauce on the bottom
 Layer of Zuccini
 Broccoli and Cauliflower next
cheese mix
 layer several times and top with Mozzarela 
top with parmessan

Recipe as I made it:

2 tbsp olive oil
4 medium zucchini (sliced)
2 cup cauliflower florets (chopped large) frozen or fresh
2 cup broccoli florets (chopped large) frozen or fresh
1/2 onion, finely chopped
4 cloves garlic, finely chopped
1 jar + extra 1/2 cup spaghetti sauce
2 cups cottage cheese
1/2 cup Parmesan cheese
1 1/2 cup shredded mozzarella
1 pound ground beef

1 pound ground turkey
1 egg

Parmessan cheese for top layer
Directions:

1. Preheat oven to 425. Put a pot of water to boil.


2. Slice zucchini into long strips (make sure they are not super thin). Boil for about 5 min remove and set aside.


3. In a large skillet add oil and turn heat up to medium. Add garlic and move around pan. Add in onion and beef/turkey and cook until beef is no longer pink and onion translucent. Add in jar of pasta sauce (save additional 1/2 cup for later).



4. Combine egg, Parmesan and cottage cheese to a small bowl.



5. In traditional lasagna pan, add meat sauce on the bottom (before adding veggies) 

6. First layer will be the zuccini on top of the meat sauce.

7. Second layer will be broccoli and cauliflower.


8. Third layer will be the cheese mix

7. Start all over with First layer until you are at the top

8. Top with the 1/2 cup of spaghetti sauce, mozzarella and parmessan cheese for the top layer.

9. Cover dish with aluminum foil and bake for about 1 1/2 hr. at 375

10. Uncover the last 10 min or when bubbly.

Celebrating Easter...Resurrection Day!

Easter is just around the corner and I'm very excited that this year our family has little ones and lots of them!
These are some of them during our Christmas Eve gathering at my home. My daughter is the oldest one of the bunch :)





When my kids where younger I wanted them to be able to have some fun on Easter and I found something that became a family tradition.
As they grew older they no longer wanted to participate in it (they are now 21 and 18) and I was bummed :(

Now my nieces and cousins have kids of their own and "Tia Christy" will now be sharing this special family tradition with them!
