I made this recipe for the first time last Christmas eve of 2012. I have to be honest, I was a little scared because I thought only my husband and I would eat it. He and I had just ended a very strict diet and we had to be on a Low Carb Diet for a few weeks. I am used to diets because of health issues, (you can read about it here) it wasn't so hard for me to once again eat Low Carb but for the rest of the family was a different story. You know how we all feel about the holidays, the more the better, the fatter the juiciest, the sweeter...you get the picture. Well at the end of the night everyone's comments were of surprise and the usual, "can we take some leftovers please?"

Zucchini
Cauliflower
I use a combination of ground turkey and ground beef
Egg
Mixing eggs with cheeses...yum!
All Mixed
Ground mix of meats with spaghetti sauce on the bottom
Layer of Zuccini
Broccoli and Cauliflower next
cheese mix
layer several times and top with Mozzarela
top with parmessan
Recipe as I made it:
4 medium zucchini (sliced)
2 cup cauliflower florets (chopped large) frozen or fresh
2 cup broccoli florets (chopped large) frozen or fresh
1/2 onion, finely chopped
4 cloves garlic, finely chopped
1 jar + extra 1/2 cup spaghetti sauce
2 cups cottage cheese
1/2 cup Parmesan cheese
1 1/2 cup shredded mozzarella
1 pound ground beef
1 pound ground turkey
1 egg
Parmessan cheese for top layer
Directions:
1. Preheat oven to 425. Put a pot of water to boil.
2. Slice zucchini into long strips (make sure they are not super thin). Boil for about 5 min remove and set aside.
3. In a large skillet add oil and turn heat up to medium. Add garlic and move around pan. Add in onion and beef/turkey and cook until beef is no longer pink and onion translucent. Add in jar of pasta sauce (save additional 1/2 cup for later).
4. Combine egg, Parmesan and cottage cheese to a small bowl.
5. In traditional lasagna pan, add meat sauce on the bottom (before adding veggies)
6. First layer will be the zuccini on top of the meat sauce.
7. Second layer will be broccoli and cauliflower.
8. Third layer will be the cheese mix
7. Start all over with First layer until you are at the top
8. Top with the 1/2 cup of spaghetti sauce, mozzarella and parmessan cheese for the top layer.
9. Cover dish with aluminum foil and bake for about 1 1/2 hr. at 375
10. Uncover the last 10 min or when bubbly.
