Pizza..Pizza..Pizza! Low carb you say? Yes! Gluten Free? Yes!!!!


I just finished my second week on my Fuel Cycle with Trim Healthy Mama!!!! I seriously thought I was not going to make it! I will give you a full update in the next few days :)

I tried an amazing Pizza Crust recipe last night for my Pizza loving son, Fridays is Pizza day for him. 
I have asked him to join me on my weight loss journey because I have been concerned for his health. He doesn't know it, but he is also eating  Trim Healthy Mama style! All the recipes I made this week he has loved and has asked over and over (along with my husband) "are you sure this is Low Carb?" because it is so good and they are stuffed after every meal I give them!

I found this Crust recipe here and just added our favorite ingredients.

INGREDIENTS
  • 2 cups almond flour
  • 2 omega-3 enriched eggs
  • 1 cup of low-fat shredded cheese of choice (mozzarella and parm blend is great for pizza; cheddar is good for flatbread. Up to you.)
  • Dried herbs of choice (basil, oregano, garlic, etc.)
  • 1/8 teaspoon salt
  • 1 tablespoon olive oil

  • DIRECTIONS:
  1. 1. Preheat your oven to 350 degrees.
  2. 2. Mix everything together, then make a big "dough ball" out of it.
  3. 3. Smash onto a pizza pan sprayed with olive oil, or place on a parchment paper-lined pan for easy clean-up. Smash thinner for flatbread; leave thicker for pizza crust.
  4. 3. Bake for around 15 minutes, longer if you prefer it crispier, even longer if you want it black and charred, but I don't recommend that.
  5. 4. If making into pizza, add toppings and put it back in the oven until everything melts together (15 minutes). If making flatbread, use a pizza cutter to cut into whatever shapes you want.

I used my Pampered Chef Large stone to make it

I coated with Olive oil

I mixed all ingredients together and came up with this

When I first saw it, I thought it was not going to make a large enough pizza crust, but here is what happens when you patiently and SLOWLY spread the dough.
I baked for 15 minutes and took out of the oven to cool for about 10 minutes
I than added Pesto sauce

Followed by Pizza sauce

My son requested I add more sauce next time and I will, but this time I wanted to make sure the crust wasn't soggy. I added my favorite toppings (zucchini,pepperoni, sausage and lots and lots of cheese!


I placed back inside the oven for 15 minutes and this is the end results...wouldn't it be nice to have blogasmell? hahaha!

I had no problems slicing it like any other pizza and the crust was thin and crunchy


I had two slices, my son had two slices and my husband did as well. I thought they would complain that I said only two slices but I also gave them the "cake in a mug" also a THM recipe and they were stuffed!
